    List of Ingredients


    • 1/2 9-oz of fresh Spinach
    • 1 lb ground beef
    • 1/4 cup bread crumbs
    • 1 egg
    • 1 Tbsp. parsley
    • Salt and Pepper to taste
    • 4 cups chicken broth
    • 1/4 cup Romano cheese, grated (optional)


    Instructions


    1. Combine the ground beef, bread crumbs, egg, parsley, salt and pepper in a bowl. (OPTIONAL: for spicy soup add cayenne powder). Mix well and form into tiny meat balls. Bake on a cookie sheet for 30 minutes at 350*F.
    2. Meanwhile, bring broth to a boil and add Spinach. Cover and boil for 5 minutes.
    3. Add the meat balls to the hot broth, bring to a simmer.
    4. Stir in cheese and serve immediately.
