    German Pancake

    List of Ingredients




    3 eggs
    2/3 cup soy flour
    pinch salt
    2/3 cup milk

    Recipe



    Preheat oven to 425°
    Whisk the eggs until well beaten.
    Add remaining ingredients and whisk together with the beaten eggs.

    In a 10" cast iron skillet, melt 1-1/2 Tablespoons butter. When melted, swish around to coat the pan well. Pour the rest of the butter into the pancake batter.
    Pour batter into the iron skillet and bake on center rack of oven for 20-25 minutes or until top is lightly browned and the pancake is set.
    Cut into wedges and serve with toppings of your choice.
    Serves 2-4 people

    I found this to be a wee bit on the blah side. I would suggest, and this is what I'm going to try the next time, adding a little vanilla and/or 1 or 2 Tablespoons artifial sweentener or unrefined sugar.

    Tip: try topping with a few strawberries sweetend with Splenda.
