I buy a chicken breast and boil it until it is done. Chop it into small pieces then use it as a chicken salad spread. You can add celery and shredded cheese as well. I like to use Miracle Whip but I'm sure other dressings are lower in carbs. Instead of using bread I wrap it into a large lettuce leaf and hold it like a sandwich. I will pre-cook and pre chop some chicken breast and put it into the freezer so all I have to do is thaw the chicken (microwave) and I'm ready to go.
