    BEEF BRISKET IN A CROCKPOT

    5 pounds brisket -- well trimmed
    1 large onion -- chopped
    1 large carrot -- chopped
    2 teaspoons salt
    1 bay leaf
    1 1/2 teaspoons thyme
    1/3 cup water (meat will release more liquid)

    1 pound small onions
    6 medium carrots -- 1/4 " pcs

    Recipe

    1-Brisket is a "fat" cut of meat, so if you are watching fats, be sure you remove all visible fat before continuing.
    2-You may need to cut brisket in half or roll to fit into your Crock-Pot. Add chopped onion, chopped carrot, bay leaf, thyme, salt and water. Cover and cook on low 8 to 10 hours.
    3-*When meat is done, lift gently from stock while supporting it underneath with a spatula. Keep warm.
    4-Add small onions and carrots to stock in Crock-Pot. Cover and cook on high 1 to 2 hours. Remove vegetables from broth with a slotted spoon and arrange around the meat.

    Note: I sometimes cook the onions and carrots in a microwave safe dish with little broth from the crockpot after the meat is done. Much quicker if you're in a hurry.
