    Extra Creamy Cheesecake

    List of Ingredients




    Small box (0.3 oz.) Sugar-Free Jell-O (any flavor)
    250 grams of cream cheese
    Whipping cream to make 1 cup whipped
    5 packets of sweetner of your choice

    Mix Jell-O with one cup hot water (do not use boiling water). Stir until completely dissolved. Set aside. (Do not add the cold water that the package calls for.)

    Soften cream cheese in a deep bowl in microwave until it is easy to beat with mixer beaters.

    Slowly add jello to cream cheese and beat with mixer until well mixed. It will be pink and the lumps should be gone.

    Add sweetner.

    Prepare your whipped cream--1/2 - 3/4 cup of the liquid whipping cream will yield about 1 cup of whipped cream. Pour into bowl and beat until soft peeks form.

    Fold in 1 cup of whipped whipping cream. Do not use high speed when adding whipping cream to jello mixture You only want to fold it in so use the lowest setting or just fold it in with a spoon until mixed.

    Pour into an 8x8 square pan or a loaf pan. Lining it with saran wrap or other plastic type wrap will allow you to lift it out of the pan for easy cutting.

    Chill in the fridge for about 2 hours. You can also freeze this. Enjoy! :)

    *Variations:

    Drop chunks of cream cheese to the mixture in the pan before you chill it. This will give you lumps of cream cheese throughout the cheesecake adding more cheese flavor.

    I have tried this recipe and it is FABULOUS. I always have cheesecake on hand.
