    Crustless Asperagus Quiche

    Recipe Introduction

    I love quiche and find I really don't even miss the crust. This one is a favorite because I can bake it for breakfast on the weekend and have leftovers for lunch during the week.

    List of Ingredients

    1 lb. fresh asparagus, trimmed and cut into 1/2 inch pieces
    10-12 slices bacon
    4 - 6 eggs
    1 1/2 c heavy cream
    salt and pepper to taste
    2 cups shredded Swiss cheese



    Recipe

    1-Preheat oven to 400°. Steam asperagus until done, but still firm (3-6 min.) Drain and cool.
    2- Cook bacon over medium high heat in a large, deep skillet. Drain, crumble and set aside.
    3-Layer Bacon and asperagus in baking dish.
    4-In a bowl, beat together eggs, cream, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.
    5- Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.

    Notes:
    -If you have a problem with custard and quiches developing a "wet top", try adding a 1-1 1/2 tbls. of flour to the egg mix.
    -If you like you can add 1/4 tsp nutmeg with the salt and pepper.
