Low Carb Fajita Omelette
Some folks don't like eggs... but they'll not even recognize what they are eating. Just be sure its a dislike and not an allergic thing before serving this tasty dish.
List of Ingredients
5-6 eggs, (you can leave out a few yolks if your like)
2 TBSP whipping cream
salt and pepper to taste
3 TBSP sour cream
3 TBSP On The Border Salsa
1/2 chicken (what ever is leftover from the night before)
Recipe
I pour the egg mixture (eggs, cream,salt and pepper) into a pan sprayed with Pam.
On low heat, I wait until the egg is beginning to solidify on the bottom, then I add chicken, sour cream and salsa in a line across the middle.
As it begins to brown, I fold up the sides. A little of the mixture tends to dribble out, but cooks quickly as it hits the pan.
I serve extra sour cream and salsa on the side, 'cause we like it HOT!
The original said it was a take off from IHOP's fajita omelette.
