Beef and Broccoli
List of Ingredients
1/2 lb beef steak such as flank -- cut in 2" strips
1 head broccoli
1/2 tsp. minced garlic
1 tbls. sherry
Marinade:
1 tbls. water
1 tbls. soy sauce
1 tsp. cornstarch
1 tbls. oil
2 egg white
Sauce:
2-3 tsp. oyster sauce
1/2 c. chicken broth
1/2 tsp. cornstarch (you may need to adjust amount)
1 tbls. soy sauce
1/2 tsp. sesame seed oil
1 tbls. oil (peanut oil is a good choice)
Salt and pepper to taste
you may wish to increase amount of sauce by doubling recipe.
Recipe
1-Put beef strips freezer bag and add marinade.
2-Seal the bag and allow to marinate in refrigerator for about 2 hrs.
3-Remove meat from refrigerator about 1 hour before cooking.
4-Cut broccoli into individual flowerettes; trim stems. (You may want to cut in half lengthwise).
5-Boil broccoli in boiling water about 2 minutes until crisp-tender.
6-Drain, rinse with cold water and set aside.
7-Combine sauce ingredients and set aside
8-Heat wok or heavy frying pan over high heat until hot.
9-Add 2 tbsp. oil, toss in garlic and beef.
10-Quickly stir fry, using a turning and flipping motion until almost done.
11-Add broccoli and sherry and stir a few minutes.
12-Stir sauce ingredients and pour into wok, while stirring vigorously until sauce thickens.
