    Strawberry Cups

    List of Ingredients




    1 sm. pkg. sugar free lemon gelatin
    1 c. boiling water
    10 oz. strawberries, unsweetened (I often use frozen and skip step 3 below.)
    8 oz. heavy cream (divided)
    1 packet of Splenda or other artificial sweetener

    Recipe



    1-Place water and gelatin in a blender. Process about 10-15 second until the gelatin dissolves.
    2-Add the strawberries and process until the berries are blended in.
    3-Place the blender container in the refrigerator until the mixture begins to thicken.
    4-Add 3/4 c. heavy cream and run the blender 10-15 seconds (just long enough to mix the cream in)
    5-Pour into 6 individual dessert dishes and chill well.
    6-Whip the remaining 1/4 c. cream with vanilla and a small amount of Splenda to garnish.
