    Summertime Strawberry Gelatin Salad

    List of Ingredients





    Bottom layer:

    1 3oz package of strawberry gelatin (Use sugar free)
    1 C boiling water
    1 C cold water

    MIDDLE LAYER:

    1 envelope unflavored gelatin
    1/2 C cold water
    1 C half & half cream (I am going to use whipping cream.)
    1 8oz package cream cheese softened
    1 C Splenda (or favorite sugar substitute)
    1/2 tsp vanilla extract

    TOP LAYER:

    1 6oz package strawberry gelatin (Use Sugar free)
    1 C boiling water
    1 C cold water
    3 to 4 C sliced fresh strawberries

    Recipe



    In a bowl, dissolve jello in boiling water; stir in cold water. Pour into a 13 X 9 X 2 in dish; chill until set.
    Meanwhile, place unflavored gelatin and cold water in a small bowl; let stand until softened. In a saucepan over medium heat, heat cream (do not boil). Add softened gelatin; stir until gelatin is dissolved. Cool to room temperature. In a mixing bowl, beat cream cheese, sugar and vanilla until smooth. Gradually add the unflavored gelatin mixture; mix well. Carefully pour over the bottom layer. Refrigerate until set, about 1 hour. For top layer, dissolve jello in boiling water, stir in cold water. Cool to room temperature. Stir in strawberries; a=carefully spoon over middle layer. Regrigerate overnight. Yield 12-16 servings.

    NOTE: This salad takes time to prepare since each layer must be set before the next layer is added.
