    PORTOBELLO MUSHROOM PIZZA'S

    List of Ingredients




    Portabella Mushroom Pizzas
    2 portabella mushroom caps
    1/3 lb. turkey sausage (no sugar)
    2 T. minced onion
    1/4 c. green pepper, diced
    1/3 c. mozzarella
    2 t. Italian seasoning
    3 T. V-8 (low sodium)
    2 T. juice from jar of banana peppers
    Olive oil
    Balsamic vinegar
    Parmesan cheese
    Baby mixed greens

    Recipe



    Brush the caps with olive oil and roast at 400 for 10 minutes.
    Meanwhile, saute the onion, green pepper and turkey sausage. Drain and mix in remaining ingredients down through the pepper juice.
    Pile on mushroom caps, and bake 10 minutes or until cheese is melted. Remove from oven and let stand 5 minutes. Place each cap on a bed of baby greens and drizzle edges with balsamic vinegar. Sprinkle with parmesan cheese.
    Serves 2 as a main course, or cut each in half to serve 4 as an appetizer.
