LC's TENDER BEEF BRISKET

List of Ingredients
Marinade:
2 tsp. liquid smoke
1 tsp. onion salt
1 1/2 tsp salt (optional)
2 tsp. Worcestershire sauce
1 tsp. garlic salt
2 tsp. celery salt
1 tsp. freshly ground black pepper

3 to 4 lb. beef brisket
************
Sauce:
1 c. tomato juice
1/8 tsp. basil leaves
1/4 tsp. pepper
1/8 tsp. oregano leaves
1/2 tsp. garlic salt
1/8 tsp. fennel seed
Recipe
1-Sauce-- combine all sauce ingredients in a small pan. Cook over low, stirring occasionally until mixture is reduced to half.
2-Marinade--Combine all marinade ingredients to make a paste.
3-Cover both sides of the brisket with the paste. Wrap in heavy foil - refrigerate overnight.
4-Bake at 250° (fat side down) for 5 hours (or on a slow grill).
5-Open foil, pour on the Sauce, cook uncovered for an additonal hour.
