Smoked Barbecue Pork Butt

Recipe Introduction
I love good barbecued Pork that will stand on its own without sauce. This one does that, but if desired, feel free to serve with sauce if you like it that way.
List of Ingredients
1 (5-pound) pork butt roast
4 tablespoons Mama's Seasoning (recipe follows)
2 tablespoons seasoned salt
4 tablespoons liquid smoke, found on the spice aisle
1 medium onion, sliced
1 cup water
3 bay leaves
Optional: Barbecue sauce of choice, for serving
Mama's Seasoning
1 c. salt
1/4 c. black pepper
1/4 c. garlic powder
OR
Sometimes I just add ½ c. Mrs. Dash ® to 1 cup salt for my version.
Recipe
Preheat oven to 350°
Sprinkle 1 side of the roast with 2 tablespoons of the Mama's Seasoning, making sure to rub well. Flip the roast over and rub the remaining 2 tablespoons of Mama's Seasoning. Repeat the process with the seasoned salt and liquid smoke. Place the roast in a large roasting pan. Add the onion, water and bay leaves to the roast. Cover tightly and place in the oven and cook for 2 1/2 to 3 hours, or until thermometer reads 170 degrees F. Let meat cool for a few minutes and then slice.
May be served with your favorite barbecue sauce, but I suggest you use a light touch and serve extra on the side.
