CHICKEN PICCATA
List of Ingredients
4 pounded chicken breasts, lightly dredged in flour
2 tbsp. sweet butter
1 tsp. capers
2 tbsp. chopped Italian parsley
1/4 cup white wine
1 cup chicken stock
juice of 1 lemon
salt and pepper to taste
1 tbsp. sweet butter, to finish sauce. Recipe
Melt 2 tbsp. of butter in a saute pan. Add chicken and a pinch of salt. Lightly brown on both sides. Add capers and parsley. Stir in wine and chicken stock. Reduce heat until liquid is slightly below chicken. Add lemon juice and adjust seasoning to taste. Finish with remaining butter.
