    Chicken Caccatori w/Spaghetti Squash

    List of Ingredients




    1/2 cup chopped onion
    1/4 cup water
    1 cup canned tomatoes -- chopped
    1/4 cup tomato paste
    1 teaspoon dried oregano
    1 clove minced garlic
    1/4 teaspoon pepper
    4 large chicken breast halves without skin -- boneless (or debone 4 thighs and remove the skin.

    Recipe



    1-Saute onion & garlic in 1 T. olive oil in a hot skillet, until tender.
    2-Add the tomatoes, paste & seasonings, stir well
    3-Cover, reduce heat, and simmer 10 minutes.
    4-Add chicken to skillet; cover with the sauce.
    5-Cover and simmer 30 minutes; uncover and simmer an additional 15 minutes.
    6-Serve over spaghetti squash.

    Carb count per serving:10.4 minus 2.3 grams fiber= 8.1 carbs & 27.4 grams protein{With 1/2 cup hot buttered spaghetti squash}

    Carb count without squash: 7.9 minus 1.8 gr. fiber= 6.1 carbs
