    Garlic Alfredo Chicken Breast w/ Summer

    Serves 4-8. I used green and yellow squash for a light and easy summer dish. But you could certainly use vegetables of your choice.
    It would also be tasty if served over pasta.

    List of Ingredients




    4 meduim boneless skinless chicken breast halves
    2 tablespoons homemade/purchased pesto sauce
    2 c sliced zucchini or summer squash
    1 jar Classico® Roasted Garlic Alfredo (Pasta Sauce)
    1 tablespoon olive oil
    Optional: Fresh grated Asiago or Parmesan cheese



    Recipe



    1. Slice chicken breasts cross grain about ¾ inch across.
    2. In a large nonstick skillet cook chicken in hot oil over medium heat to brown. Turn chicken; add zucchini and/or squash; cook, stirring squash gently once or twice, until the chicken is tender and no longer pink (170°) and the squash is crisp tender (about 4-6 min.).
    3. Add jar of sauce and allow to heat through.
    4. Transfer chicken and vegetables to dinner plates (over pasta if desired); sprinkle with Asiago or Parmesan cheese if you'd like.
