    Pesto Chicken Breast With Summer Squash

    Serves 4. Use green or yellow squash and enjoy this light and easy summer dish.
    I've also cubed the breasts and served this over some pasta to extend the recipe.

    List of Ingredients




    4 meduim boneless skinless chicken breast halves
    2 tablespoons homemade/purchased pesto sauce
    2 cups finely chopped zucchini or summer squash
    2 tablespoons finely shredded asiago cheese or parmesan cheese
    1 tablespoon olive oil


    Recipe




    1. In a large nonstick skillet cook chicken in hot oil over medium heat for 4 minutes.
    2. Turn chicken; add zucchini and/or squash; cook, stirring squash gently once or twice, until the chicken is tender and no longer pink (170°) and the squash is crisp tender (about 4-6 min.).
    3. Transfer chicken and squash to 4 dinner plates; spread pesto over chicken; sprinkle with Asiago or Parmesan cheese.
