    20 oz. frozen spinach, chopped, thawed and squeezed dry
    4 oz. Swiss cheese, shredded (1 c.)
    3/4 c. ricotta cheese
    1/3 c. Parmesan cheese, grated
    3 Tbls. onion, finely chopped
    1 clove garlic, minced
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. ground nutmeg

    6 chicken breasts halves, bone-in
    2 Tbls. olive oil
    1 tsp. paprika
    1/2 tsp. dried oregano
    1/2 tsp. dried thyme

    Recipe



    1-Combine the first nine ingredients; gently stuff 1/2 cup under the skin of each chicken breast. Place in a greased 15x10x1 inch baking pan.

    2-Combine oil, paprika, oregano and thyme; brush over chicken. Sprinkle with additional paprika if desired. Bake in preheated 350°F oven for 60-90 minutes or until juices run clear.

    Yield: 6 generous servings
