Very Easy Pickled Vegetables
List of Ingredients
Active time: 15 min/complete time: about 2 hr
1 medium English cucumber
1/4 c. seasoned rice vinegar
1/4 c. water
3 Tbls. Splenda
1/2 tsp. salt
1 c. red onion, thinly sliced
Recipe
Halve cucumber lengthwise, then slice about 1/2-3/4 in. thick.
Whisk vinegar, water, Splenda, and salt until Splenda and salt are dissolved.
Combine cucumber, onions, (see notes for other veggie suggestions) and vinegarette in a glass bowl, cover and chill well. (I use a zip top bag.)
Drain vegetables before serving.
Makes 4 servings.
Notes:
You might just add Splenda to taste.
This goes well with barbequed meats, chicken, fish or as as a side with sandwiches. Try adding slices of carrot and radishes or chopped fresh dill. The dill is especially nice with fish.
