CREAM OF (YOUR CHOICE) SOUP
List of Ingredients
You choose your favorite vegetable to make this soup. I love it with asparagus, mushrooms or broccoli. (If you like it creamier, just add more cream.)
1 qt. of asperagus, chopped
1 qt. of chicken broth
1 c. heavy cream
salt and white pepper
lemon, see directions
Recipe
Cook asparagus in chicken broth until cooked (about 5 minutes). Puree in blender (or if you have one of those immersable types they work great). Turn it back into the pan and reheat. Add the heavy cream; salt and pepper to taste. Serve. Garnish with grated or minced lemon rind or a squeeze of lemon juice.
