ITALIAN SAUSAGE AND VEGGIE SOUP
An easy, rich and hearty soup that satisfies that desire for home cooking.
List of Ingredients
-4 links of Italian Sausage (hot or mild... your choice.
-1 qt. chicken broth
-1 cup canned tomatoes, crushed
-2 1/2 cups of celery or cabbage (or both) chopped
-optional: hard cheese grated (see note below)
Recipe
If you like you can brown off the links for more flavor, but the original recipe suggests you just toss everything in the pot and cook at medium low until veggies are wilted (obviously, celery is going to take a bit longer to cook than cabbage). Remove the sausage and and allow to cool slightly. Using a serated knife, cut into pieces (a little over 1/4 inch in length should be about right). Toss back in the pot. Reheat slightly. Serve. Garnish with the grated cheese.
Note: You might want to try Stella's Mellow Asiago. I personally buy 2 lb. bags of mixed parmesan & romano at Costco.
Carbs with celery for the complete recipe is 30.6 before adding the cheese. Using cabbage saves a wee bit of carbs and comes in at 28.2. Figure about 1/2 carb for each Tbls. of hard cheese you use.
