Seafood Stew
A great way to add "I love you" to fixing a meal. So quick and tasty.
Try adding crusty garlic bread to the table for those that aren't on Low Carb.
List of Ingredients
1 tbls. extra virgin olive oil
1 med onion, chopped
2 cloves garlic, crushed (or minced)
2 cans (6 1/2 oz. each) chopped clams with juice
6 oz. cooked white crab (you can use canned or imitation)
6 oz. canned shrimp
1 can (10 3/4 oz.) condensed tomato soup
1 sm. jar (2 oz) pimentos, undrained
1 1/2 c hot water
1/4 tsp.salt
1/4 tsp. dried basil
1/4 c. fresh parsley, chopped
optional: Parmesan cheese
Recipe
Heat the oil in a large saucepan. Add onion and garlic to the pan, cover and cook over low heat about 15 minutes. Drain and rinse the shrimp (crab too if you use canned). Stir clams with the juice, crab, shrimp, tomato soup, pimentos and their juice, water, salt and pepper into the onion mixture. Chop the parsley and crush both the oregano and basil; add to the seafood mix. Cook covered over low heat for about 10 minutes. Place in serving dishes and sprinkle with Parmesan cheese (if desired).
