    Stuffed Baked "Potatoes"

    2 1/2 cups cauliflower
    1 cup sour cream
    1/2 cup grated cheddar cheese (medium is good)
    Chopped white parts of 3 green onions
    salt and pepper to taste
    bacon

    Recipe




    Cut up the cauliflower, throwing the stems away (I don't use the stems but just cut up the florets). Cut the florets into small pieces. When you have 2 1/2 cups of the small pieces of florets cut, just place them in a bowl. Rinse them and pour out the excess water from the bowl. Put the bowl in the microwave and nuke the cauliflower for about 5-6 minutes or so. You can tell when the cauliflower is done. it will change color and consistency. When it is done, you should be able to mash it with a fork. Mash it with a fork when it is done. (This is also usually when I add the salt and pepper, just like I would if it was regular mash potatoes.) Add 1 cup sour cream, 1/2 cup grated cheddar cheese (leave just a little off to the side to sprinkle on top of the casserole after it is stirred up), and the green onions.

    Stir up the mixture.

    Then you can: (Pick one)

    1.) Place mixture in a baking dish and sprinkle the top of the mixture with the remaining cheddar cheese and place it all in the oven on 350 degrees for about 20 minutes or until warmed. Then crumble 3 slices of cooked bacon on top and sprinkle on the green portion of the diced green onions (finely diced, specially with the green parts).

    2.) Sprinkle the top of the mixture with the remaining cheddar cheese and place mixture in the microwave (in a microwave safe dish) and nuke for about 1 1/2 or 2 minutes (or until warm and cheese is melted on top), then crumble 3 slices of cooked bacon on top and sprinkle on the green portion of the diced green onions (finely diced, specially with the green parts).

    4 servings ... 3.5 g carbohydrates ea serving.
