my adaptation of tomato pie

Delicious and good anytime at any meal (including breakfast)
List of Ingredients
4 tomatoes, peeled and sliced (24 carbs)
10 fresh basil leaves, chopped (
1/2 cup chopped green onion (4)
1 cup grated mozzarella (
1 cup grated cheddar (
1 cup mayonnaise (
Salt and pepperRecipe
Preheat oven to 350° F.
Put tomatoes in a colander in the sink in a single layer. Sprinkle with salt and let them drain for 10-15 minutes.
Layer the tomato slices, basil, and onion in buttered pie dish. Season with salt and pepper. Mix the grated cheeses and mayonnaise together. Spread this mix over the top of the tomatoes and bake for 25 minutes until lightly browned.
Makes 6-8 servings
total recipe carbs = approximately 28.
For TOMATO PIE, simply place these ingredients in your pre-cooked Low Carb pie shell. Add the pie shell carbs.
