Gluten Free Finn Pancakes

Recipe Introduction
Finn Pancakes are a staple, here in Thunder Bay, Ontario, Canada. A tribute to our large Finnish population...we have one of the largest concentrations of Finnish people, outside of Finland.
Here's my take on a Gluten Free version.
List of Ingredients
2+1/2 cups Milk
2 Eggs well beaten
1/2 tsp. Vanilla
2 Tablespoons Butter melted
1+1/4 cup Gluten Free Flour blend ( King Arthur Blend)
1/2 tsp Xanthan Gum
1/2 tsp salt
1 Tablespoon Sugar
1/2 tsp Baking Powder
Butter for fryingRecipe
Mix all wet ingredients.
In a large bowl, whisk all the dry ingredients, to make sure the Xanthan Gum is well blended.
Combine the wet with the dry.
Heat pan to Medium High. Add a touch of butter. Pour about a third to a quarter cup of the batter into hot pan. Tip pan around to spread batter. Should be the size of a dinner plate. Flip when top appears solid, and edges crispy. Fry another 30 seconds, and remove to a warm plate.
Serve either rolled up loosely, or stacks of 4 pancakes. serve with a bit of butter and syrup, or fruit and whipped cream.
