1 to 2 heads Garlic Cloves - peeled
Sun Dried Tomato salad dressing
White Vinegar
Dried Oregano
Ground Black Pepper
Pinch of crushed dried ChilesRecipe
Peel Garlic, cutting off stalk end. Cut large pieces in half. Fill 250 ml jelly jar with the garlic.
Bring large pot of water to a boil. REMOVE pot from heat. Drop the garlic into the water, and stir once. Leave in for 4 minutes. Remove garlic and plunge into sink filled with cold water, to stop the cooking process. When cool, remove garlic and drain.
Place some black pepper, oregano, and crushed Chiles into bottom of jar. Place garlic back into jar, leaving 1/2" space at top. Pour Vinegar into jar, filling 1/2 full. Top jar off with Sun-dried Tomato dressing. Wipe top and seal.
Shake jars up to mix. Place in a cool dark place, mixing up every few days. Ready to eat in 3-4 weeks.
*** If you put the salad dressing in first, the tomatoes sit at the top, and mess up your 50/50 ratio... So put vinegar in first.
*** I usually make large batches, and mix the vinegar and salad dressing in a large measuring cup - 1 bottle salad dressing to 1 bottle Vinegar. No fuss, just fill the jars.
