Mexican Corn Bread

List of Ingredients
1 lb extra-lean ground chuck
16 oz can cream-style corn
1 cup cornmeal
1/2 teaspoon baking soda
1 teaspoon salt
1/4 cup oil
1 cup skim milk
2 eggs, beaten
1/2 cup low-sodium taco sauce
2 cup shredded fat-free cheddar
1 medium onion, chopped
1 garlic clove, minced
4 oz can diced green chilies
Recipe
1) brown ground chuck
2) meanwhile, combine corn, cornmeal, baking soda, salt, oil, milk, eggs & taco sauce. Pour half of mixture into crock.
3)Layer cheese, onion, garlic, chilies & beef on top of cornmeal mixture & then top w/ remaining cornmeal mixture.
4) Cook on HIGH 1 hr & LOW 3 1/2- 4 hrs or on LOW 6 hrs.
makes 6 HUGE servings- 360 cal, 10 g fat, 4 g fiber= 7 pts
* this is very filling & not too spicy at all
