    4 Hush Puppies = 2 Points

    List of Ingredients




    3/4 cup yellow cornmeal
    1/4 cup all-purpose flour
    1/2 teaspoon sugar
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    1/8 teaspoon freshly ground pepper
    1/8 teaspoon cayenne
    3/4 cup lowfat buttermilk
    1 large egg
    2 scallions -- finely chopped
    2 tablespoons grated onion

    Recipe



    Preheat the oven to 450 F. Place two 12-cup mini-muffin tins in the oven while preheating. Combine the cornmeal, flour, sugar, baking powder, salt, baking soda, pepper, and cayenne in a bowl, beat the buttermilk, egg, scallions, and onion in another bowl. Add the buttermilk mixture to the cornmeal mixture and stir until just blended.

    Remove the hot tins from the oven and spray with nonstick spray. Spoon the batter into the cups, filling each about 3/4 full. Bake until the tops spring back when gently pressed, about 10 minutes. Run a knife around the sides of the hush puppies and turn them out onto a wire rack. Serve warm.
