    1 Serving; 3 Points

    List of Ingredients




    1/3 cup chopped fresh mushrooms
    1 tsp butter
    1/3 cup egg substitute
    3 tablespoons fat free milk
    1/8 tsp pepper
    Dash ground nutmeg
    ¼ cup reduced-fat Swiss cheese, shredded
    1 tsp bacon bits
    1 tsp minced chives

    Recipe



    In a small skillet, sauté mushrooms in butter until softened. In a small mixing bowl, beat egg, milk, pepper and nutmeg. Stir in mushrooms, cheese, bacon and chives.

    Pour into a 5-inch pie pan coated with nonstick spray. Bake at 350 degrees for 30 minutes or until set. Let stand for 5 minutes before serving.

    (I cooked this in the microwave in a casserole dish sprayed with nonstick spray for 3 minutes. After 2 minutes, I stirred it a little, cooked it for one minute more, and it was great. DO cover the dish with waxed paper though!)

    Per serving: 154 calories, 6 g fat, 24 mg cholesterol, 349 mg sodium, 6 g carbs, trace of fiber, 19g protein
