    Pineapple-Orange Sunshine Cake

    16 Servings; 3 Points per serving

    List of Ingredients




    Cake:
    1 box Sweet Rewards yellow cake mix
    1/4 C. applesauce
    egg substitute to equal 4 eggs
    1 can (11 oz.) mandarin oranges in light syrup

    Frosting:
    1 (8 oz.) light whipped topping (thawed)
    1 small pkg. instant sugar free vanilla pudding
    1 can (15 1/2 oz.) crushed pineapple (in juice)

    Recipe



    Cake: Preheat oven 350 degrees. In lg. bowl, stir together all the cake ingredients until moist. Beat by hand for 2 minutes. Coat a 9 X 13 cake pan with cooking spray. Pour batter into pan and bake 30 to 40 minutes (until toothpick inserted in center comes out clean). Cool completely.

    Frosting: In lg. bowl, mix together all the frosting ingredients until well blended. Spread over cake and store in refrigerator.
