    4 Servings; 6 Points per serving

    List of Ingredients




    1 ½ cup frozen corn, thawed
    8 scallions, sliced
    1 (15-ounce) can pinto beans, drained and rinsed
    1/3 cup 50% light shredded cheddar cheese
    ½ cup reduced-fat Bisquick
    ½ cup whole milk
    ½ cup chunky salsa
    2 eggs
    Salsa for garnish

    Heat oven to 400 degrees. Coat a 9-inch pie plate with nonstick cooking spray. Layer corn, scallions, and bean in pie plate. Sprinkle with cheese.

    In a small bowl, mix baking mix, milk, the ½ cup salsa, and the eggs until blended. Pour into pie plate.

    Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Slice into wedges and serve with extra salsa.

    Per serving: 309 calories, 16 g protein, 7 g fat, 45 mg carbohydrate, 114 mg cholesterol, 619 mg sodium, 9 g fiber
