    4 Servings; 6 Points per serving

    8 oz extra lean ground beef
    1/2 cup onion -- chopped
    1/2 cup frozen corn kernels
    1 cup sliced mushrooms
    1/4 cup ripe olives -- sliced
    1 1/2 cups cooked pasta -- rotini
    1 can tomato soup, reduced fat, condensed -- (10-3/4 oz)
    1/2 cup salsa -- chunky style
    1/2 tablespoon brown sugar -- or 1 T brown sugar twin
    1/3 cup lowfat cheddar cheese -- shredded

    Preheat oven to 350°. Spray an 8x8-baking dish with cooking spray.

    In a large skillet sprayed with cooking spray, brown meat and onion. Drain the meat and rinse it, and return it to the skillet. Stir in corn, mushrooms, olives, and rotini pasta. Add tomato soup, salsa, and brown sugar twin and cheddar cheese. Mix well to combine.

    Spread mixture into prepared baking dish. Bake 30 minutes. Place baking dish on a wire rack and let setfor 5 minutes then serve.

    I've used both black or green olives (prefer the kick that green gives it) and I also like to add the cheese to the top the last 15 min of baking, otherwise it seems to disappear.
