2 tsp. salt
1/2 tsp. paprika
1/8 tsp. pepper
2 skinless, boneless, chicken breasts
1/2 cup chopped green peppers
1 onion, chopped
1 cup sliced mushrooms
2 cups tomato juice (or 1 15-ounce can chopped or stewed tomatoes)
1/2 bay leaf, crumbled
1/2 tsp. oregano
1/4 tsp. chili powder
Recipe
Preheat oven to 350 degrees. In a small cup or bowl, combine 1 teaspoon salt, the paprika and pepper. Rub mixture evenly onto chicken. Place chicken in a large nonstick skillet and cook about 10 minutes on each side or until browned. Transfer to a shallow baking pan and set aside.
In the same skillet, cook green pepper and onion about 5 minutes or until soft. Stir in remaining teaspoon of salt and all other ingredients, scraping the bottom of the skillet with a wooden spoon or nylon spatula to release brown bits. Bring to a boil and cook about 15 minutes or until liquid is reduced by about one half. Pour mixture evenly over chicken and bake at 350 F. about 25 minutes or until chicken is tender.
