Sesame Chicken

List of Ingredients
1 TB sesame seeds
1 cup no salt added chicken broth
½ cup dry sherry
1 lb skinless chicken breast tenders
¼ cup red pepper jelly
2 TB low-sodium soy sauce
2 TB water
1 ½ TB cornstarch
¼ tsp salt
2 cups hot cooked long grain rice (cooked without salt or fat)
1/3 cup sliced green onions
Recipe
1. Place sesame seeds in a heavy nonstick skillet over medium high heat. Cook, stirring constantly, until toasted. Remove seeds and set aside.
2. Pour broth and sherry into skillet; bring to a boil. Add chicken; cover, reduce heat, and simmer 8 to 10 mins or until chicken is tender. Remove chicken from skillet and set aside.
3. Stir pepper jelly and soy sauce into broth in skillet and cook over medium heat until jelly melts, stirring often.
4. Combine water, cornstarch, and salt, stirring with a wire whisk until smooth. Stir into broth mixture and cook over medium heath. Stir constantly until thickened and bubbly. Return chicken to skillet and cook until thoroughly heated.
5. Combine rice and green onions. Place ½ cup rice mixture on each plate and top evenly with ¼ of the chicken tenders and sauce. Sprinkle with toasted sesame seeds.
