Baked Garlic Potatoes

1 pound white potatoes -- about 1 1/2 inch diameter
4 cloves garlic -- minced
2 tablespoons olive oil
1/4 cup chopped parsley
2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
Recipe
Wash and dry the potatoes; arrange in a casserole in 2 layers. Combine garlic, oil, parsley, salt and pepper and pour over the potatoes and toss to coat. Cover and bake in 450 degree oven for 20 minutes. Turn to recoat with the oil mixture and bake another 25-30 minutes. Serve warm.
