List of Ingredients
2 lbs yellow squash, sliced
3/4 cup chopped onion
1 tbsp. lite stick margarine,
2 tbsp. flour
1 cup skim milk
3/4 cup RF cheddar cheese, (3 oz.)
1/2 tsp. salt
1/4 tsp. black pepper
Cooking spray
1/2 cup fresh bread crumbs, toasted
Recipe
Preheat oven to 350 degrees. Steam squash and onion, covered 12 minutes or until tender. Melt margarine in saucepan over medium heat, add flour; cook 1 minute, stirring constantly. Remove from heat, add cheese, salt and pepper; stir until cheese is melted. Stir in squash mixture and spoon into 1 1/2 qt. casserole coated with cooking spray; sprinkle with breadcrumbs. Bake at 350 degrees for 20 minutes.
