2 (16 oz.) bags frozen corn
1 (7 oz.) can chopped green chilies, drained
1/2 cup skim milk
1 (8 oz.) package fat-free cream cheese, cut into pieces
Salt and pepper to taste
1/2 teaspoon paprika
Recipe
Preheat the oven to 350 degrees. In a 2-quart baking dish, combine the corn and green chilies. In a small microwave-safe dish, heat the milk and cream cheese in the microwave until the cream cheese is melted, about 30 seconds. Mix with a fork to blend. Stir into the corn, and season with the salt and pepper. Sprinkle with the paprika. Bake for 30 minutes, or until bubbly.
