Dijon Roasted New Potatoes

List of Ingredients
1 tbsp olive oil
2 tbsp Dijon mustard
3/4 tsp paprika
1/4 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1 1/2 pound potatoes, new, quartered
Recipe
1. Coat a 9x13 inch baking dish with cooking spray
2. Heat oven to 425 degrees. Whisk together oil, mustard, paprika, thyme, salt and pepper in a large bowl. Add potatoes and stir until they are coated.
3. Transfer potatoes to the baking dish and roast 15 minutes. Stir and roast another 15 minutes.
