1 eggplant, peeled and sliced 1/8” thick
1 1/2 cups low-sodium tomato sauce
1 2/3 cup (6 2/3 ounces) shredded reduced-fat mozzarella cheeseRecipe
Preheat the broiler.
Place eggplant on a baking sheet and broil 5 minutes on each side to remove moisture. Remove from oven.
Reduce oven temperature toot 300 degrees.
Spoon some tomato sauce onto a 9 x 9” baking dish. Top with a layer of eggplant, some cheese, and more sauce. Repeat layers until all ingredients are used, ending with cheese. Cover with foil and bake 2 hours, or until eggplant is tender. Let stand 10 minutes before serving.
