1/3 cup water
3 tablespoons lemon juice
2 tablespoons white wine vinegar
1/2 teaspoon dried marjoram
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1 clove garlic, halved
1 bay leaf
1 pound small fresh mushrooms
1 tablespoon nonfat Italian salad dressing
Recipe
In a medium saucepan, combine the water, lemon juice, vinegar, marjoram, oregano, thyme, garlic,and bay leaf. Bring to a boil. Add the mushrooms and return to a boil, then reduce the heat. Cover and simmer about 5 minutes or until the mushrooms are tender.
Remove the saucepan from the heat. Remove and discard the garlic and bay leaf. Stir in the salad dressing. Transfer the mushrooms and liquid to a glass container. Cool slightly, then cover and marinate in the refrigerator for at least an hour before serving.
Per 1/4 cup: 23 calories, .3 g fat, 1 g fiber, 0 mg cholesterol, 6 mg sodium.
For variety, you could replace the mushrooms with sliced zucchini, yellow squash, baby carrots, or cherry tomatoes.
