Polenta with Vegetable Sauce

8 1/2 oz polenta (1/2 of a 17 oz prepared roll)
1 Tbsp olive oil
1 cup pico de gallo
6 black olives, sliced
2 Tbsp capers, drained
1/4 cup grated Parmesan cheese
Recipe
Slice polenta into twelve slices and spread them in a single layer in a large baking dish. In a small skillet, saute pico de gallo, olives, and capers in olive oil until the onion is limp. Spread the sauce evenly over the polenta, and sprinkle evenly with Parmesan cheese. Bake 350 for 25 minutes. Two rounds of polenta per serving.
Note: If you don't have pico de gallo available, you can make your own with equal parts of chopped tomato, onion, and green peppers. If you like it spicy -- and I do -- use some jalapeno pepper.
