List of Ingredients
1 med. onion, chopped
1 large tomato, chopped
1 gr. Chile, sliced
2 slices of 40% reduced-fat bacon (Core use Canadian Bacon)
1 small can of chopped olives
1 can of yellow hominy
1 can of black beans
Salt and pepper to taste
Recipe
Fry bacon. In drippings, sauté the onion, tomatoes, olives, green chilies. (If using Candain bacon, you might have to add a little water or chicken broth to replace drippings.) Add hominy and beans; crumble bacon and add to pan. Salt and pepper to taste.
