Pumpkin Roll
List of Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup pumpkin
- 1 tablespoon lemon juice
- 3/4 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup nuts, finely chopped (optional)
- FILLING:
- 1 cup powdered sugar
- 2 (3 oz) packages cream cheese
- 4 tablespoons butter
- 1/2 teaspoon vanilla
Instructions
- Beat eggs on high speed for 5 minutes while adding sugar. Mix in pumpkin and lemon juice. Sift together, flour, baking powder, cinnamon, ginger, nutmeg and salt. Fold into pumpkin mixture.
- Spread into a greased 15-in. x 10-in. x 1-in. pan and top with nuts if desired. Bake at 375 degrees for 15 minutes.
- While hot turn out onto a dish towel. Start at narrow end and roll towel and cake and let it cool. While it is cooling mix together the filling mix.
- FOR FILLING: Combine powdered sugar, cream cheese, butter and vanilla; mix well.
- When cake is cool unroll and spread with the filling, roll up and chill.
