Pumpkin Chocolate Chip Muffins
List of Ingredients
- 2 cups all-purpose flour
- 3/4 cup brown sugar, packed
- 1 tablespoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 3/4 teaspoon salt
- pinch of ground allspice
- 3/4 cup pumpkin puree
- 1 egg
- 2/3 cup milk
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla
- 1/2 cup min chocolate chips
Instructions
- Preheat oven to 375 degrees. Coat 12 cup muffin pan with non-stick cooking spray.
- Combine flour, brown sugar, baking powder, cinnamon, ginger, salt and allspice in a large bowl. In a seperate bowl, beat together pumpkin, egg, milk, butter and vanilla. Pour into flour mixture; stir until well combined. Fold in chocolate chips.
- Divide among prepared muffin cups and bake for 25 minutes.
