- 2 cups flour
- 1 cup sugar
- 1 cup margarine, softened
- 2 (8 oz) packages cream cheese, softened
- 4 tablespoons sugar
- 4 tablespoons milk
- 2 eggs
- 2 teaspoons vanilla
- 1 (16 oz) can crush pineapple, drained
- 2 tablespoons margarine, melted
- 2 cups flaked coconut
Instructions
- In a bowl combine 2 cups flour, 1 cup sugar, and 1 cup softened butter until crumbly, press into the bottom of a 9-in. x 13-in. pan and bake at 350 degrees for 10-12 minutes. Cool.
- Blend together, cream cheese, milk, eggs, sugar, vanilla and pineapple. Spread this over the cooled crust.
- Combine the 2 tablespoons melted margarine and 2 cups coconut; sprinkle over the filling and bake at 350 degrees for 20 minutes or until coconut is lightly browned. Cut when cool. Store in the refrigerator.
