    Hawaiian Cheesecake Bars

    • 2 cups flour
    • 1 cup sugar
    • 1 cup margarine, softened
    • 2 (8 oz) packages cream cheese, softened
    • 4 tablespoons sugar
    • 4 tablespoons milk
    • 2 eggs
    • 2 teaspoons vanilla
    • 1 (16 oz) can crush pineapple, drained
    • 2 tablespoons margarine, melted
    • 2 cups flaked coconut


    Instructions


    1. In a bowl combine 2 cups flour, 1 cup sugar, and 1 cup softened butter until crumbly, press into the bottom of a 9-in. x 13-in. pan and bake at 350 degrees for 10-12 minutes. Cool.

    2. Blend together, cream cheese, milk, eggs, sugar, vanilla and pineapple. Spread this over the cooled crust.

    3. Combine the 2 tablespoons melted margarine and 2 cups coconut; sprinkle over the filling and bake at 350 degrees for 20 minutes or until coconut is lightly browned. Cut when cool. Store in the refrigerator.
