    Red Velvet Cake with Cream Cheese Icing

    • CAKE:
    • 2-1/2 cups flour
    • 1 cup buttermilk
    • 1-1/2 cups vegetable oil
    • 1 teaspoon baking soda
    • 1 teaspoon vanilla extract
    • 2 (1 oz) bottles red food coloring
    • 1-1/2 cups sugar
    • 1 teaspoon cocoa powder
    • 1 teaspoon white vinegar
    • 2 eggs
    • FROSTING:
    • 1-1/3 sticks butter, softened
    • 10 oz. cream cheese, softened
    • 4 cups powdered sugar (1 lb)
    • 2 cups pecans, chopped


    Instructions


    1. Preheat oven to 350* F. Mix all of your cake ingredients together. Pour batter equally into three greased 9-inch round cake pans and bake for 20 - 25 minutes or until toothpick comes out clean.

    2. Cool layers in pans on wire racks for 10 minutes, then remove cakes from pans and cool completely on wire racks.

    3. To make your frosting, combine butter, cream cheese and powdered sugar; beat until fluffy, fold in 1-1/2 cups chopped pecans.

    4. Frost cake and fill layers with frosting when cake is cool. Decorate the top of the cake with the rest of the pecans and refrigerate the whole cake at least 1 hour before serving.
