Red Velvet Cake with Cream Cheese Icing

- CAKE:
- 2-1/2 cups flour
- 1 cup buttermilk
- 1-1/2 cups vegetable oil
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 (1 oz) bottles red food coloring
- 1-1/2 cups sugar
- 1 teaspoon cocoa powder
- 1 teaspoon white vinegar
- 2 eggs
- FROSTING:
- 1-1/3 sticks butter, softened
- 10 oz. cream cheese, softened
- 4 cups powdered sugar (1 lb)
- 2 cups pecans, chopped
Instructions
- Preheat oven to 350* F. Mix all of your cake ingredients together. Pour batter equally into three greased 9-inch round cake pans and bake for 20 - 25 minutes or until toothpick comes out clean.
- Cool layers in pans on wire racks for 10 minutes, then remove cakes from pans and cool completely on wire racks.
- To make your frosting, combine butter, cream cheese and powdered sugar; beat until fluffy, fold in 1-1/2 cups chopped pecans.
- Frost cake and fill layers with frosting when cake is cool. Decorate the top of the cake with the rest of the pecans and refrigerate the whole cake at least 1 hour before serving.
