Cauley Square Tea Room Key Lime Pie

1 can sweetened condensed milk
1/2 cup fresh squeezed key lime juice (approx. 8-10 limes)
4 egg yolks (use pasteurized eggs)
Recipe
Whip egg yolks and blend with condensed milk. Add key lime juice, mixing only until juice is mixed in. Do not over beat.
Pour into a 9" baked pie shell or a prepared graham cracker pie crust. Chill until set (overnight is best). Top with whipped cream if you like. For a deeper filling, make one and one-half times the above recipe.

KEY LIMES are smaller, have seeds and are more tart than regular (Persian) limes. They may be used in much the same way as regular seedless limes. Key limes will turn yellow as they ripen at room temperature. For best results, you may store Key limes in the refrigerator two weeks or longer.
