Braised Tarragon Chicken

3 Tbsp. butter
2 tsp. finely chopped fresh garlic
1 tsp. dried tarragon
4 whole skinless, boneless chicken breasts - halved
1/2 cup white wine or chicken broth
4 medium carrots, sliced 1/4"
1/2 tsp. salt
1/4 tsp. pepper
1 medium red onion, cut into eighths.
1 tsp. cornstarch
1 tsp. cold water
1/4 cup chopped fresh parsleyRecipe
In a 10" skillet melt butter until sizzling; stir in garlic and tarragon. Add chicken breasts. Cook over high heat, stirring occasionally until chicken is lightly browned (3-5 minutes). Reduce heat to medium.
Stir in remaining ingredients *except* onion, cornstarch, water and parsley. Cover and cook, stirring occasionally until chicken is fork tender (15-20 minutes).
Add onion and continue cooking until onion is tender (5-7 minutes).
In a small bowl stir together cornstarch and cold water; stir into hot mixture. Continue cooking, stirring occasionally, until mixture thickens (3-5 minutes). Sprinkle with parsley.
Serve over rice.
