    Roasted Moroccan Spiced Chicken

    1 3 1/2 lb chicken, rinse and pat dry
    4 garlic cloves, peeled & flattened
    1 lemon -- halved
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp paprika
    1/2 tsp salt
    1/2 tsp freshly ground black pepper
    1/4 tsp cinnamon
    1/4 tsp cayenne pepper
    3 Tbsp olive oil

    Rub chicken all over with garlic, place garlic in cavity. Squeeze lemon juice into small bowl, place halves in cavity. Brush chicken with half of juice. Mix seasonings. Rub over and inside chicken. Tie drumstick together. Heat oil in ovenproof container over high heat. Add chicken and remaining lemon juice. Baste and transfer to oven. Bake at 400° for about one hour, basting occasionally. Serve hot, cold, or room temperature.
