Sweet and Sour Slaw

1 head green cabbage (about 2 pounds), finely chopped
1 large green bell pepper, stemmed, seeded, and finely sliced
1 medium onion (or 1/2 depending on strength and taste), thinly sliced
1 carrot, peeled and grated
1 cup sugar
1 cup distilled white vinegar
3/4 cup vegetable oil
1 tablespoon salt
1 teaspoon dry mustard
Recipe
1. In a nonreactive, large mixing bowl, combine the cabbage, bell pepper, onions, and carrot. Sprinkle on 3/4 cup of the sugar and toss.
2. In a nonreactive small saucepan over medium head, combine the remaining 1/4 cup sugar with remaining ingredients. Bring to boil, stirring often. Pour the boiling sauce over the cabbage mixture and toss well. Cover and refrigerate for at least 1 hour before serving.
